Everything lands
in the middle.
A forty-seat room built around one round table. Order for everyone, turn it, pass it on.
How it works
House rules
First
Order for the table
Three or four plates each is about right. Add more as you go; nothing arrives in courses.
Then
Turn it
Every table has a turning centre, from the two-tops by the window to the big round ten.
And
Stay late
The table is yours for the evening. We do not run second sittings, so nobody is waiting behind you.
A dining room, not a concept.
Tondo is run by six people who cook, pour and carry. The big table in the middle seats ten strangers or one very good birthday, and the counter is kept free for whoever walks in.

Notes from the table
“Add notes in the CMS and they will take turns here.”

Six in the morning at the fish market
Kenji buys for the day before the menu exists. This is how the plates get decided.

Ninety seconds: the flatbread
The dough takes two days. The baking takes a minute and a half. Both numbers matter.

Why every table turns
We put a turning centre on every table, including the ones for two. Here is what it changed.
